Sarsoun Ka Saag

Tasty dish made of Mustard and Spices from Punjab region

Ingredients

2 PoundsSarsoun/ Rappini/ Green Mustard Leaves
1 PoundSpinach
0.5 PoundGreen Fenugreek Leaves
2 Cloves of Garlic Crushed (Optional)
2 Finely Chopped Green Chillies
1 TablespoonGrated Ginger
Salt to Taste
0.5 CupCorn Flour

Ingredients For Tadka

1 LargeFinely Chopped Onion
1 TeaspoonGreen Chilli Paste
1 TablespoonGinger Paste
1 TeaspoonGarlic Paste
1 TeaspoonCumin Seeds/ Zeera
1 TeaspoonFenugreek Seeds
1 Pinch Hing
6 Whole Red Chillies
1 TablespoonCoriander Powder
1 TeaspoonGaram Masala
0.5 TeaspoonSalt
0.5 CupOil or Desi Ghee

 

Method

  1. Wash and clean all the leaves and chop them thin.

  2. In a pressure cooking add two cups of water and salt and add the leaves. Add ginger, garlic and green chillies to it.

  3. Pressure cook them for 10- 15 minutes. Let it cool down so we can open the lid.

  4. Now with the help of an hand blender or mixer blend it well adding corn flour in small quantity. Cook it for another 10 minutes with out lid on at low flame.

  5. Now saag is ready to add in Tadka.

  6. In a n frying pan add oil or ghee and heat it. Add a pinch of hing . Now add cumin seeds after 1 minute add fenugreek seeds add red chillies. When fenugreek turns red add onions to it.

  7. Now add green chillies, ginger and garlic paste.

  8. Fry them till they turn golden brown and add garam masala, coriander powder, salt and turmeric powder to it.

  9. Add a little water and cook masala for 1-2 minutes now add this masala to the saag.

  10. Serve it hot with makki ki roti, butter and buttermilk.
