Ghiya/Lauki/Dhodhi Masala

Opo/Bottle Gourd/Calabash in spices

Serving 2-3 persons

Ingredients

500 GramsGhiya
2 TeaspoonGarlic Paste
2 TeaspoonGinger Paste
1 TeaspoonGreen Chilli
1 MediumFinely Chopped Onion
1 MediumFinely Diced Tomato or
2 TablespoonTomato Paste
0.5 CupOil

Dry Spices

1 TeaspoonCumin Seeds
2 TeaspoonGaram Masala
1 TeaspoonTurmeric Powder
2 TeaspoonCoriander Powder
Salt to Taste

For Garnishing

2 TablespoonFinely Chopped Coriander leaves

 

Method

  1. Wash, peel and cut Ghiya in small pieces.

  2. In a pressure cooker heat oil and add cumin seeds .When they starts crackling add onions and fry them till they turns golden brown.

  3. Now add garlic , ginger and green chili paste and cook it for 1 minute.

  4. Then add all the dry spices one by one followed by 1 table spoon of water and cook for another 1 minute.

  5. Now add fresh tomatoes or tomato paste. Cook it till the masala leaves the oil. Add Ghiya to the masala and pressure cook it up to 3- 4 whistles.

  6. When the pressure cooker cools down open it put it in a serving bowl and garnish it with coriander leaves, and serve it with chapatti or pranthas.

If you don't want to cook it in a pressure cooker you can cook in a frying pan. It may take little little longer in it depending on the freshness of Ghiya.
